Banana Oat Waffles

Pamper yourself with irresistible Banana Oat Waffles… they’re so tasty, you won’t have a clue they’re good for your heart! Oats have a unique protein that is equal in quality to soy protein. Just one cup of oat cereal has 26g of protein in addition to 17g of fiber, which improves cholesterol levels. Don’t have a waffle iron? This recipe is good for making pancakes too.


Ingredients:

1 ripe banana, mashed
2 cups water (or soymilk, almond milk, rice milk)
1/2 cup rolled oats, uncooked
1 1/2 cups whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
vanilla extract, to taste (optional)
2 Tbs. maple syrup (optional)
1 cup pecans, chopped (optional)

Directions:
Soak the oats in water or non-dairy milk over night.
Mix together the mashed banana and oat mixture.
Add remaining ingredients and mix, leaving some lumps in the batter.
Cook on a waffle iron, according to the manufacturer’s instructions (Note: The batter also works for pancakes).
Top with fresh fruit and some syrup.
